Ingredients :

For the Cake:
1 box (15.25 oz) funfetti cake mix (or white cake mix)
1 cup water
1/2 cup vegetable oil
3 large eggs
For optimal color, use a quarter cup of rainbow sprinkles (jimmies, not nonpareils)

For the Pudding Layer:
One box of instant vanilla pudding mix (3.4 oz)
2 cups cold milk
Half a teaspoon of vanilla essence (optional; adds taste)

For the Topping:
One container (8 oz) of thawed whipped topping (such as Cool Whip)
1/4 cup rainbow sprinkles (for garnish)
Half a cup of optional white chocolate chips for added sweetness

Method :

Bake the Cake:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.

In a large bowl, prepare the funfetti cake mix according to the package instructions (combine cake mix, water, vegetable oil, and eggs). Fold in 1/3 cup rainbow sprinkles.

After baking for 25 to 30 minutes, a toothpick inserted in the center should come out clean. Pour the batter onto the baking dish that has been prepared.

Let the cake cool for 15-20 minutes.

Poke the Cake:
Using the handle of a wooden spoon or a large straw, poke holes all over the cake, about 1 inch apart, ensuring they reach about 3/4 of the way through the cake.

Prepare the Pudding:
In a medium bowl, whisk together the instant vanilla pudding mix and cold milk for 2 minutes until thickened. Add vanilla extract if desired.

To set the pudding, place the cake in the refrigerator for half an hour.

Add the Topping:
Evenly cover the cooled cake with the thawed whipped topping.
Sprinkle the remaining 1/4 cup rainbow sprinkles and white chocolate chips (if using) over the top for a festive finish.
Before serving, let the flavors blend in the refrigerator for at least an hour.

Serve and Enjoy:
Slice and serve your Funfetti Poke Cake chilled.
