strawberry cream cake


2 large eggs
1 cup milk mixed with 2 Tblspns vinegar.
1 and half tsp vanilla essence
1 tsp strawberry essence (optional)
125 mls oil
125 mls boiled hot water.
1 and 1/4 cup sugar
2 and a half cups flour (spoon and level)
1 tsp baking powder
2 tsp bicarbonate of soda
1/2 tsp fine salt


Sift and whisk flour, baking powder, bicarbonate of soda and fine salt. Set aside.

In a large bowl wisk eggs, sugar, buttermilk, vanilla essence, strawberry essence and oil till well combined and frothy.
Whisk in the sifted dry ingredients in to the wet

Then slowly pour in the hot water and whisk.

Pour in to prepared tins and bake for 30 to 40 minutes till done.

Decorate as desired.
