Bagels can have any filling: thick jam, jam, marmalade, dried fruits, nuts, or, as in this recipe, boiled condensed milk. Condensed milk gives sweetness and a pleasant caramel taste. I prepare the dough without sugar using cottage cheese, it has a rich cottage cheese taste. Bagels are very aromatic and tasty
Ingredients :
300 gr – cottage cheese
250 gr – flour
100 gr – butter
70 gr – boiled condensed milk
2 tsp – baking powder
1 pinch of salt
Method :
Place the cottage cheese in a bowl, add salt, and pour in the melted butter. I have 9% wet cottage cheese
Mix cottage cheese with butter. Combine the flour with baking powder and add in portions to the bowl. The amount of flour depends on the moisture content of the cottage cheese. Add some of the flour, mix, and check the consistency of the dough. We do not beat the dough with flour
The dough turns out tender and does not stick to your hand. Transfer it to a bag and put it in the refrigerator for 30 minutes
Divide the dough into 2 equal parts. Roll out one part into a thin round cake (diameter 34-35 cm). First cut into 4 parts, then into 8 and 16 parts (wedges are obtained). We put boiled condensed milk on the wide parts of the dough, do not add much (about 1/3 tsp)
Cover the condensed milk with dough and press it on 3 sides with your fingers so that the filling does not leak out. We roll it up and get small bagels
The dough is unsweetened, there is not enough sweet filling, so we roll the bagels in sugar. We prepare the second part of the dough in the same way
Place bagels in sugar on a baking sheet and bake in a preheated oven at 180 degrees for 15-20 minutes
As soon as the bagels are browned, take them out. It took me 17 minutes. Let cool
Bagels turn out crispy on top, but flaky and soft inside. The curd dough and caramel filling are very, very tasty
