This easy-fried zucchini recipe is a variation of a recipe I’ve written about before ( Easy Fried Zucchini Recipe ). It is a little more satisfying than the previous one – due to the addition of a small amount of cheese, but it is just as healthy, tasty, and simple! You only need 7 ingredients and 10 minutes to make the perfect summer dinner – low-calorie, vegetarian and delicious
In the summer, with the amount of zucchini I cook, you would think I have a whole zucchini farm! Along with zucchini muffins and pancakes, simple vegetable side dishes like this recipe for fried zucchini with dill are a must
Learning how to roast zucchini to perfection is easy. The high frying temperature allows them to fry quickly, making them soft and slightly crispy without being mushy
The combination of garlic, dill, and a little grated cheese creates a vegetarian side dish that even your kids will love
Serve it with baked chicken or fish for a wonderful combination! The versatility of this roasted zucchini recipe is that it’s low-carb, gluten-free, and fits many diets
Ingredients :
1 kg of zucchini
1 tbsp a spoonful of olive oil for frying
1/2 teaspoon salt
ground black pepper – to taste
2 cloves of garlic
2 tbsp spoons of finely chopped dill
some hard cheese
Method :
Cut large zucchini into quarter circles 1-1.5 cm thick. If the zucchini is medium in size, half-circles are ideal. And small zucchini can be cut into slices
Heat a large, high-sided frying pan over high heat and then add the oil. Also, add the zucchini and sprinkle with salt and pepper
Cook for 3-4 minutes, stirring a maximum of 2 times. Let the zucchini sit on the hot surface of the pan for at least a minute to brown it. Do not stir constantly so as not to end up with pale, “steamed” vegetables
Once the zucchini is ready, sprinkle them with chopped dill and freshly grated garlic
Stir and sprinkle with finely grated hard cheese (Parmesan would be ideal)
Serve them immediately hot or warm, although they are good cold
