Chicken and marinade
chicken wings – 500 g
Ginger (a fresh, small piece about 3×3 cm)
Garlic – 2 teeth.
Onion – 1 PC
Mustard – 1 tbsp. l.
Soy sauce – 2 tbsp. l.
Honey (optional) – 2 tsp
Chicken egg – 2 pcs
Breadcrumbs /Breading (only homemade)
Crisps (or unsweetened cornflakes) – 50 g
We divide the wing into two parts along the joint.
Prepare the marinade: Place all the indicated components in the “marinade” column in a blender bowl, and grind into a pulp. Add your favorite spices to the marinade if you like. Pour the marinade over the chicken and refrigerate for at least an hour. And better – night.
Breading is one of the most important things. Here we take a mix of chips (or cornflakes) and breadcrumbs. Breadcrumbs are taken exclusively homemade! Stores will be worse. For those who do not know how to make homemade breadcrumbs: dry the loaf slices in the oven for several minutes, and then grind finely in a blender, but not into flour. Let there be larger pieces, the size of buckwheat. Chips also pass through a blender, but, again, not into flour. By clicking on the photo you can see what both chips and crackers should look like.
is rolling the wings not in flour, but in starch. Each piece should be well coated with starch. Then dip the wing into a beaten and salted egg. You will see an interesting metamorphosis of starch: after contact with the egg, it will immediately swell, and become even whiter. This is what we need, this will hold the whole breading.
After the egg, roll the wing well in breadcrumbs and chips. See how beautifully and evenly the wing is covered?
We do not fry the breaded wings immediately but put them on a sheet of parchment. They should lie down for 10-15 minutes and dry!
Heat treatment. Here you have a choice of two options: fry or bake in the oven. Whoever loves it) If this is an oven, then put a baking sheet with wings in a preheated 180 degrees for 30-40 minutes. If this is frying, then pour more oil into a preheated pan (as in deep-frying) and fry over medium heat for about 5-7 minutes on each side.
