kefir – 250 g
flour – 300 g (+/-)
soda – 1 tsp
salt – 1/2 tsp
Mix flour with soda.
Add salt to kefir, mix, and add flour with soda.
The mixture ought to be delicate and marginally tacky to the hands.
We cover the dough with a bowl and let it rest on the table for half an hour so that the soda reacts with kefir.
We form a large cake or several. You can utilize a moving pin or stretch with your hands. We do not roll out very thinly, trying to leave the side thicker.
If desired, such cakes can be prepared with the addition of fresh, dried, or frozen herbs, cheese, garlic, paprika, or Provencal herbs, mixed with dough, or as a filling.
Lubricate the cakes with water or milk and make holes in the center.
Bake at 180°C with convection or 200°C without convection on top and bottom heat for 15-20 minutes.
Lubricate the finished cakes with oil.
