Lady Caprese Pie The pie is very easy to make, the crust has a nice creamy taste, strawberry jam, baked meringue, and nuts add their own flavor
ingredients :
4-5 pcs – eggs
250 gr – sugar
salt – a pinch
150 gr – butter
250 gr – sour cream (20%)
1 tsp. – baking powder
230 gr – flour
100 gr – walnuts
250 gr – jam/thick preserves
Method :
To begin, separate the eggs into yolks and whites. Place the whites in the refrigerator for a while, and pour the yolks into a bowl, add a pinch of salt, add 125 g of sugar (this is half of the total indicated amount), and using a mixer, beat the yolks until fluffy, about 2 minutes
Now add 250 g of sour cream at room temperature (I have 20% fat) and 150 g of melted and completely cooled butter to the well-beaten yolks. Use a mixer to mix all the ingredients until smooth
In another bowl, combine 230 g of sifted flour and 1 tsp. baking powder and add dry ingredients to liquid ingredients. Mix with a mixer at the lowest speed. The dough is ready, the consistency is quite thick
Be sure to place a sheet of parchment paper on the bottom of the baking pan; this is done so that we can remove the cake from the pan. The size of my mold is 23×33 cm. We transfer the dough into it and evenly level it over the entire surface
Place the cake in an oven preheated to 180 degrees for 25-30 minutes. While the sponge cake is baking, let’s make meringue
We take the chilled egg whites out of the refrigerator, pour them into a larger bowl, add a pinch of salt to them, and beat at high speed until white foam appears. Then gradually adding sugar, we continue to beat the whites until stable peaks form
You need the same amount of sugar in the whites as we added to the yolks, also 125 g. Properly whipped whites do not move to the sides and remain in it when the bowl is turned over
Another important ingredient in today’s recipe is walnuts. They add their own “zest” to the pie. Pour them into a bag and either uses a rolling pin or a hammer to crush the nuts into smaller pieces
Today I’m making a classic recipe for a pie with thick strawberry jam; jam will also work, but you can experiment with taste and use jam from different berries each time
Well, the biscuit is ready, take it out of the oven and let it cool a little, literally about five minutes. Then grease the cake with strawberry jam or preserves and lay the whites on top.
Distribute them evenly throughout the sponge cake and put the cake in the oven again for 10-15 minutes, until the meringue turns golden brown. We leave the temperature in the oven the same – 180 degrees
That’s it, the Ladies’ Whim pie is ready. Let it cool completely right in the mold, and then transfer it to a flat surface and carefully remove the baking paper. Sprinkle chopped nuts on top and cut into portions
Store the pie in a closed container in the refrigerator. It turns out very soft, tender, tasty and easy to prepare. The taste of the pie is in no way inferior to cakes. I am sure that once you try it, you will do it all the time!
