Hawaiian Chicken Cutlets Recipe

The combination of chicken and pineapples has become quite familiar to us; we often prepare salads with chicken and pineapples. Today I offer a recipe for chopped chicken cutlets with pineapple slices under cheese caps. The results are very tasty, beautiful, juicy cutlets that can be served every day and on a holiday table

Ingredients:

700 gr – chicken fillet
2 – medium eggs
2 tbsp – spoons of starch
2 tbsp – spoons of mayonnaise
1 – clove of garlic
salt, pepper, spices to taste
6 – slices of canned pineapple
100 gr – cheese

Method:

Cut the chicken into small cubes. I made the cutlets from chicken breast, but any other part of the chicken will do. You can cut it a little smaller, a little larger, I cut it into cubes of this size

Place the chopped chicken in a bowl, beat in the eggs, add mayonnaise, and add flour or starch (I use potato starch). Salt. I added some ground black pepper, some ground red hot pepper, and some sweet red paprika. You can add your favorite spices. Add a finely chopped garlic clove and mix everything well

If it suddenly turns out a little liquid, you can add a little more flour or starch. This minced meat can be prepared in advance, it can be stored in the refrigerator for up to three days, and the cutlets can be fried as needed. Cover the minced meat and leave for now

I cut the pineapple mugs in half lengthwise to make them thinner. Instead of circles, you can also take pieces of pineapple; you can simply lay them on top. The number of pineapples is at your discretion

Heat a little vegetable oil in a frying pan and place the cutlets with a spoon. Fry for literally 1-2 minutes on each side. We don’t need to bring the cutlets to full readiness, now they should just set and hold their shape. From this amount of minced meat, I got 12 cutlets. For each cutlet I used one, but very full, tablespoon of minced meat

Lightly grease the cutlets with mayonnaise, put pineapples on top, and sprinkle with grated cheese

Place the baking sheet in an oven preheated to 200 degrees for literally 20-25 minutes. The cutlets should be fully cooked and a beautiful, tasty cheese crust should form on top

Serve cutlets with any neutral side dish. In my opinion, boiled rice or rice cooked in a frying pan
